Employers look for staff with solid training in all aspects of cooking from basic prep to food safety. The basic cook Fusion Foundation course gives you the skills and training which will allow you to work in any professional kitchen in the hospitality and curry industry.
This in house basic foundation program is an intensive, exploration and application of classic specialized culinary techniques. With two-thirds of the program spent in the kitchen under the supervision of experienced and qualified chef tutors, students develop the real-world hands on skills necessary for culinary success. This program is designed by professional chefs for both those who are serious recreational cooks and too prepare those who want to work in the food service industry for jobs in the field.
Full time and part time Basic Cook classes are available.

Overview of the course
These courses are suitable for anyone aspiring to become a professional chef. Our training and learning kitchen will give you the opportunity to experience cooking in practical pressure. This course is for you if you are looking to develop your food preparation and cooking skills, along with your knowledge of both the food you cook and other vital aspects you will require for working in the industry. There is the option to study this in house qualification alone or as a full time programme with a Level 2 Diploma in Professional Indian Cuisine. This course will equip you with the skills and knowledge necessary to be ready for work in the top regional restaurant kitchen where there is work ready for you in to full time employment or progress to an NVQ Level 3 in Professional Cookery.
short Course Content
Our short course includes:
• Topics covered in Spice blending and cooking and methods specific to Indian cuisine including using the tandoori oven and open flame grill
• Food Safety in catering and hospitality
• Prepare and cook stocks, and spiced traditional sauces
• Prepare and cook pulse and vegetables
• Prepare and cook meat and poultry • Prepare and cook fish and shellfish
• Prepare and cook rice and Indian breads
• Produce traditional starter products and range of Indian food emphasising in all levels of cooking practice meeting the course criteria.
How is the course taught?
You will be taught practical sessions in our training and learning kitchen and theory sessions will be delivered in the computer suite classroom.
How will I be assessed?
You will be observed and assessed with timed practical tasks completions, and short answer question packs to test your knowledge. There will also be one test for food safety.

What support is available?
Our qualified chef tutors will support and guide you step by step in the classrooms/workshops and through tutorials as they help you to develop the skills and techniques required in specialised Indian and fusion cookery. Learning Support is also available for those with learning difficulties/disabilities; please let us know on application if you require this service.
What facilities and resources are available?
A range of snacks, hot and cold drinks are provided. Halal meat and washing facilities are available at the academy. We have class room and a computer suite for those preferring to reflect or research. We are fully equipped with a wide range of learning materials and qualified friendly staff on hand to support you.

3 Day Fusion Flavours Crash Course
This course has been specially created for those chef and kitchen managers with experience in cooking with passion to create unusual lip licking flavours for new signature dishes with a twist for boosting the restaurant menu.
6 day introductory basic fusion cookery course
Our six day Foundation Cookery course is ideal for those with little cooking experience who want learn the core skills that will help them to start cooking with confidence.
This course will give you a broad range of skills to become a competent cook, starting with the basics and moving on to more complex areas.
You will be with like-minded people with the same level of skill, and the course is a lot of fun as you work your way through a wide range of recipes each day enjoying a lunch and early evening dinner. You will be amazed at how much you accomplish during this course.
